Happy August!

We've had such a hot dry summer this year (meaning 80's in the North Country!) that I've been on a search to find yummy healthy food and drink recipes. It's been fun experimenting and trying new things. I am not a great cook, so I look for easy and not too many ingredients.

I found some winners around the web and had so much fun trying new recipes that I thought it would be fun to share them with you, too.

We also have a new gratitude story shared by one of our newest members, Michelle. This is really a miracle story. She and I had a wonderful phone conversation and I'm so happy to have her in our community.

Summer Yum-Healthy Hot Weather Recipes

Summer is the best time for cold drinks, juicy melons and fruits, fresh raw vegetables and big salads. To celebrate these foods, I put together a collection of summer yum recipes, foods and drinks from around the web. Enjoy!

Nutritious delicious drinks
The first stop on our tour is our site. My husband and I love the Watermelon Water with its tasty, refreshing blend of pureed watermelon, water, lime and a little sweetener. The recipe is very forgiving and can be thinned or thickened to your preference.

This page also has lots of suggestions for alternatives to sugary soda and other unhealthy drinks. Try the pureed soup cold and summerize your herbal teas with mint, hibiscus, lemon balm and other cooling herbs.

Light healthy summer soups
Enjoy one of these 30 pureed soups. Blend up with an immersion blender stick or regular blender. Most of these versatile soups can be enjoyed hot, too.

Tomato gazpacho, Cold Yogurt Cucumber soup, Ginger Turmeric Spiced Spring Carrot Soup-those are on my “to try” list. My pureed soup standby, hot or cold is broccoli, cauliflower, reishi mushroom soup seasoned with dill. See the recipe at the nutriton drink link above. Healthy and yum.

Fresh Fruits, melons, berries
Eat lots of these raw foods in hot weather. On the right of this page is a video with ideas for making super simple frozen fruit pops. Say no to flavored sugar water pops. You and your kids will have fun making and eating these instead. Yum.

Salad and summer were made for each other. Try these 20 delicious recipes from around the world and you will never get bored with salad again. Easy to make, modify and eat for lunch, dinner and on the side. How does Watermelon Salad, Israeli Couscous Salad with Roasted Vegetables and Blueberry Corn Salad sound?

Ice Cream and Smoothie desserts
I scream, you scream, we all scream for ice cream. Lactose intolerant or vegan? No problem. Some of these recipes use coconut or nut milk. All you need is a blender, a freezer, and a few simple ingredients. Prefer shakes and smoothies? Add extra liquid and there you go.

So far I've made the Mango Madness with Greek yogurt, vanilla and frozen mangoes. Refreshing, like a sorbet. Next I tried the Dark Chocolate Peanut Butter Swirl. Pretty good and would have been better if my bananas weren’t overripe. Coconut Bliss was good too, more like ice milk than ice cream, especially when paired with dark chocolate bits. Mix them right in.

A Miracle Gratitude Story

I am delighted to have a new gratitude story to share with you in the community pages.

In her story, How Gratitude Helped Me Love My Son, Keep My Son, and Get Out of Jail, Michelle shares her miraculous story of how her out-of-the-blue jail sentence helped her keep and love a child she thought she didn't want and get on the road to recovery.
