Greetings from Val

Hello and Happy October!

The days are getting colder and shorter with frightening speed and I'm not a fan. Even so, this fall has more than made up for it with a brilliant display of vibrant yellows, orange and red colored trees and bushes-the prettiest in years. I am especially grateful for this show after a summer so dry that the trees were dropping loads of brown dead leaves in August. I was worried for some of the bigger, old trees, but as soon as a soaking rain came they perked back up. That was a relief for me and no doubt for them, too.

Our local farmers have been bringing in a colorful fall harvest of all kinds of squash, gourds and pumpkins. Speaking of, I learned something new. Not all pumpkins are good for cooking. (Ok, I know, a chef I'm not) Well, I actually bought a pie pumpkin and pureed it. Loved the bright orange color compared to canned and in my opinion, so much better tasting in those (healthy) pancakes. Mmmm.


Pumpkin Anyone?

Native Americans have enjoyed this nutritious, flavorful, easy-to-store squash as a dietary staple for hundreds of years.

Pumpkins are a good source of iron, potassium, magnesium and fiber. Its main claim to nutritional fame are beta-carotene and the antioxidants lutein and zeaxanthin. This combo has protective anti-aging effects on your immune system, eyes and skin.

You can buy the puree in a can (avoid the pumpkin pie filling loaded with sugar) or make your own from sugar or pie pumpkins. Jack-o-lantern pumpkins are less flavorful.

To make puree:
Cut the pumpkin in half and scrape out the membrane and seeds. Place open sides down in a roasting pan with a half-cup of water. Bake until soft at 350 degrees for approximately 45-60 minutes. Let cool a bit before scraping the pulp from the skin. Puree in a blender of food processor. The puree can be frozen in an airtight container for up to a year.

Add the puree to soup, smoothies, cookies, bread, pancakes, muffins, cake and of course, pie. Cinnamon, nutmeg and cloves along with a natural sweetener enhance the flavor and add even more health benefits.

Beauty tip: Give your skin a rejuvenating treat by slathering puree on your face like a mask.

Pumpkin seeds, or pepitas from any type of pumpkin contain omega 3 fatty acids, phytochemicals, tryptophan, zinc, iron and calcium. Roast the rinsed and cleaned seeds. Spread in a single layer on a baking sheet and bake about 45 minutes at 225 Fahrenheit until lightly toasted. Stir occasionally while they bake. Add seasonings if you wish.

Not a fan of pumpkin? Substitute nutrient and beta-carotene rich orange fleshed squashes or sweet potatoes instead.


Cockroach Milk and Cricket Flour

Sounds like a Halloween trick, right? Truth is, insects are eaten in many parts of the world and are now being included in tasty treats everywhere.

Scientists have discovered that the milk of the female Pacific beetle cockroach, the only known species to give birth to live young and nurse them, has four times the nutritional value of cow’s milk. They found that cockroach crystal milk protein can be extracted and are working to reverse-bioengineer it for mass production, possibly as a supplement. Not sure how well that will sell...

While cockroach milk may be a food of the future, cricket flour, aka cricket protein powder, has already made its debut in the food supply. Crickets are farmed and then gassed before being turned into a nutty tasting gluten-free flour. The flour is a good source of protein, vitamin B12 and vitamin B2 and also contains calcium and iron.
